Description

Creamy lemon chia seed pudding with citrus zest, plant-based milk, and natural sweetener. A refreshing gluten-free breakfast or dessert.

Ingredients

  • ¼ cup (4 tbsp) chia seeds
  • Juice and zest of 1 large lemon
  • 1 cup almond milk, coconut milk, or Greek yogurt
  • 23 tbsp maple syrup, honey, or stevia
  • ¼½ cup optional mix-ins: blueberries, raspberries, vanilla, poppy seeds, lemon curd, or plant-based protein powder

Instructions

  1. Mix Base: In a jar or bowl, whisk together milk base, lemon juice and zest, and sweetener until smooth.
  2. Add Seeds: Stir in chia seeds, ensuring they are evenly distributed.
  3. Chill: Cover and refrigerate for at least 4 hours or overnight until thickened.
  4. Adjust Texture: Stir again before serving, adding more milk if needed.
  5. Garnish: Optionally layer with lemon curd, berries, and top with zest, mint, or coconut flakes.

Notes

  • White chia seeds yield a lighter look; black chia seeds offer a bold contrast.
  • For faster thickening, use warm milk and blend before chilling.
  • Store in airtight jars in the fridge for up to 5 days.
