Ingredients
- ¼ cup (4 tbsp) chia seeds
- Juice and zest of 1 large lemon
- 1 cup almond milk, coconut milk, or Greek yogurt
- 2–3 tbsp maple syrup, honey, or stevia
- ¼–½ cup optional mix-ins: blueberries, raspberries, vanilla, poppy seeds, lemon curd, or plant-based protein powder
Instructions
- Mix Base: In a jar or bowl, whisk together milk base, lemon juice and zest, and sweetener until smooth.
- Add Seeds: Stir in chia seeds, ensuring they are evenly distributed.
- Chill: Cover and refrigerate for at least 4 hours or overnight until thickened.
- Adjust Texture: Stir again before serving, adding more milk if needed.
- Garnish: Optionally layer with lemon curd, berries, and top with zest, mint, or coconut flakes.
Notes
- White chia seeds yield a lighter look; black chia seeds offer a bold contrast.
- For faster thickening, use warm milk and blend before chilling.
